1. The constant tunneling of earthworms allows the free passage of air into and out of the soil.  

2. Worms' burrowing also breaks up the hard pan and plow sole created by mechanical tillage.

3. By eating organic materials such as manure, leaves, grass and decaying wood, earthworms break them up at a much faster rate than would otherwise occur.

Tips from the Farm Kitchen: Cooking Rabbit

When roasting whole, bard or lard with pork back fat, or wrap in caul to keep the flesh moist and tender. Or bone the main body and fill with a stuffing. Baste the rabbit frequently during cooking.

Marinate in wine or olive oil, with aromatic vegetables and seasonings, before cooking to help tenderize the meat.

This is an especially important reminder in the fall months, when mushroom hunters across the country are trolling damp grass and groves in search of savory, golden chanterelles, meaty maitake mushrooms and other edible fungi.

Many look just like the ones in grocery stores, but they may not be safe to eat.

Bastille Day


Joyeux Quatorze Juillet!

Referred to as Bastille Day in English, Quatorze Juillet is a the French national holiday celebrating the storming of the Bastille prison in 1789, an open act of rebellion against the monarchy that is considered a turning point of the French Revolution, which preceded the emergence of the modern French "nation." Two days after the storming of the Bastille, the King Louis XVI officially recognized France's new tricolor flag -- the blue, white and red said to symbolize liberty, equality and brotherhood.

The Storming of the Bastille marked the start of the French Revolution, the end of the monarchy and the beginning of the Republic of France.

Recipe File: Oatmeal - Raisin Cookies


Adapted from The Health Promoting Cookbook

Moist and delicious, these cookies are a sweet and satisfying snack or dessert.

4 cups oats ground in a food processor or coffee grinder
1 teaspoon baking powder
½ teaspoon baking soda
1 teaspoon cinnamon
¼ teaspoon nutmeg
2 large ripe bananas, mashed
1 cup apple juice
½ cup raisins

Preheat the oven to 375°F. Mix the dry ingredients in a large bowl.  In a food processor, blend the bananas and juice until smooth.

Slowly add the dry ingredients while mixing. Pour the batter into a large bowl, and add the raisins.

Drop by spoonfuls onto a nonstick baking sheet. Press down with the bottom of a glass to flatten. Bake for 10 minutes. Makes 24 cookies.
