Home Grown: When to Prune

As the days get shorter and plants go dormant for winter, many homeowners become anxious to prune their landscapes. But for most trees and shrubs, pruning in the fall is not the best time.

Some woody trees and shrubs can be injured during winter from pruning cuts or open wounds that won't have a chance to heal properly until next spring. An open wound in the winter is more likely to suffer damage from water freezing and thawing inside the cracks and crevices of the exposed wood.

Farm Fresh: Old Birds with Little Red Berries

The hybrid Broad Breasted White turkey produces more meat (mostly white meat) at less cost than any other bird. This has made it so popular among producers and consumers that it has pushed almost every other breed of turkey into extinction, or close to it. This is the classic Thanksgiving turkey you see on television and in cookbooks and glossy magazines, but it is not the turkey that great-grandma served, or the pilgrims for that matter. It has been selectively bred to have, above all else, huge breasts full of juicy white meat.

Abnormally large breasts? Juicy white meat? Our foremothers would have been shocked!

Here's How To... Make a Twinkie

To get the light, spongy cake shell requires a few extra steps. First, beat the egg whites until they are very stiff.

After mixing the batter, fold the egg whites in gently. The volume of the batter will increase greatly. See all those bubbles? This batter is fluffy!

To get the authentic Twinkie shape, use this canoe pan.

Here's How To... Bake Bread

When we make bread, we participate in the same alchemy as countless generations before us who used the carbon dioxide produced by tiny yeast cells digesting carbohydrates to make bread, and used the alcohol they make to create beer and wine.

We've been at it so long, it is likely part of our genetic code.

Home Grown: Overwintering Geraniums

You can beat the frost and save your geraniums by taking them inside to overwinter.

In freezing temperatures, unprotected annual geraniums will turn a mushy green and die. They can be preserved, however, by overwintering indoors before they get nipped by a hard frost.

Pot up the plants, take cuttings, or store the plants as bare-root specimens.Whichever method you choose, understand that success isn’t guaranteed.

Tips from the Farm Kitchen: Turkey Cooking Alternatives

Whether the oven fails, a power outage occurs or there just isn't enough room in the oven, roasting a whole turkey in a conventional oven isn't the only way to get the big bird cooked safely.

Grilling turkeys is becoming a popular cooking method. During grilling, a turkey cooks by indirect heat in an outdoor covered gas or charcoal grill and a pan of water should be placed beneath the grilling surface to catch the fat and juices that drip from the turkey as it cooks.

Deep fat frying a whole turkey also can be successful by using an unstuffed turkey 12 pounds or less in size.

Home Grown: Preventing Sunscald

Homeowners who planted new trees this year, especially ones with thin bark, will want to protect the southwest side of the new tree this winter to protect it from sunscald.

Many young, smooth, thin-barked trees like honey locusts, fruit trees, ashes, oaks, maples, lindens, red buds and willows are susceptible to sunscald and bark cracks.

Farm Fresh: Aptly Named

I once went to a dentist with the surname Peck. And I recall seeing a nurse named Oaui (pronounced oweee!).

Then there was the undertaker, B. Stiff, and the cardiologist, Dr. Hart, and the exterminator, Ed Bugg.

These names are call aptonyms ("aptly named") by people who get a kick out of such things, like English teachers and writers of dictionaries and bored postal clerks.

Farm Direct: Cultivar Walnuts Offer Income Potential

Growing black walnut trees that have been grafted to improved cultivars have potential for excellent production and financial return. Some farmers grow the walnuts on their land, pick and sell them for extra money, but there is a potential to do much more using grafted trees.

According to Brian Hammons of Hammons Products Company in Stockton, Missouri, a landowner with a 40-acre planting of cultivar nuts (60x60 spacing = 480 trees) could be producing as much as 80,000 pounds of nuts and generating an additional $56,000 income (about a $32,000 profit after hulling and hauling).
