Tips from the Farm Kitchen: Healthier Substitutions


Here are some substitions that will "make it healthier":


  • If you're using bread crumbs... make it healthier with oats or finely ground fiber-rich non-sweetened cereal.
  • If you're using cream... make it healthier with evaporated skim milk.
  • If you're using 1 whole egg... make it healthier with ¼ cup egg substitute or two egg whites.
  • If you're using all-purpose flour in baked goods... make it healthier by replacing half the all-purpose flour with whole-wheat flour.
  • If you're using iceberg lettuce in a salad... make it healthier with romaine, endive or other dark-green leafy lettuce and include baby spinach leaves.
