Recipe File: Chocolate-Ginger Dip

adapted from Llewellyn's 2013 Herbal Almanac

4 ounces dark chocolate
1 inch fresh ginger root (about 1 teaspoon grated)
2/3 cup whole milk
1/3 cup heavy whipping cream
1/2 teaspoon powdered ginger

Grate the chocolate into a small bowl and set aside.

Peel and grate 1 inch of fresh ginger root, which should yield about a tablespoon of grated ginger. Put into a small bowl and set aside.

Combine the whole milk and heavy whipping cream in a pot. Heat gently on the stove; do not allow to boil.

Slowly sprinkle the grated chocolate into the milk, stirring until the chocolate melts.

Stir in the grated ginger. Finally, add ½ teaspoon powdered ginger.

Fall may have the slight edge over the spring for fertilizing. But  no matter when you fertilize, how can you know if you should fertilize at all?

If your mature trees appear healthy and have never been fertilized, don't start now.

If it ain't broke, don't fix it!

And don't  fertilize simply because you think it's the right thing to do.

Home Grown: Garden Anywhere With a Compost Sock

Ohio State University Extension horticulturists harvest their high tunnel strawberries about a month ahead of field-grown strawberries. This is made possible by a new technology that could make fruits and vegetables accessible to anyone, anywhere.

The Ohio State researchers are using a compost sock system as a growth medium and comparing the crop’s performance to in-ground high tunnel strawberries. The hope, says OSU Extension horticulturist Brad Bergefurd, is that performance and yield are comparable to that of in-ground high tunnel production.

“If we find the compost sock system comparable to in-soil production, that means that we can farm anywhere with high tunnels using this system as the growing medium,” said Bergefurd. “You won’t need soil.”

Recipe File: Admiral's Rum and Brandy Punch

Adapted from Hot Drinks

1 cup apricot puree
2 cups pineapple juice
1/2 cup white grapefruit juice
1/2 cup (4 ounces) light rum
1/4 cup (2 ounces) brandy
4 lime wedges for garnish

Combine the apricot puree and juices in a saucepan over medium heat and bring to a low simmer.  Lower the heat and simmer gently for 2 minutes more, then add the rum and brandy.

Serve in heatproof punch cups or glasses.  Place a lime wedge in each cup, divide the punch evenly among the cups, and serve warm.

Recipe File: Paris After Dark

Adapted from Hot Drinks

4 teaspoons sugar
4 teaspoons Dutch process cocoa powder
4 teaspoons heavy cream
1 1/2 cups strong coffee, freshly brewed
1/2 cup heavy cream, firmly whipped with 1 teaspoon sugar, for garnish
Pinch of fleur de sel or other sea salt for garnish

In each of two mugs, mix 2 teaspoons of the sugar and 2 teaspoons of the cocoa until well-blended and lump free. Add 2 teaspoons of the cream to each and stir until thoroughly combined into a light paste. Add 3/4 cup of the coffee to each and stir again until thoroughly mixed.

Top each with a dollop of whipped cream. Roll the dollop over to stain it with the coffee, then sprinkle a few grains of sea salt atop the whipped cream.
